Аннотация
В статье представлены результаты разработки органолептической балльной шкалы и оценки качества продуктов из сливок повышенной жирности и продуктов переработки ягод Ribes uva-crispa L. Определили номенклатуру органолептических показателей продукции, описательные характеристики показателей для разных уровней качества, коэффициенты весомости для показателей, граничные пределы значений показателей и категории качества. Провели апробацию балльной шкалы при оценке качества новой продукции
