Abstract
The article presents an analytical characteristic of the original new facility for the production of premium "marble" beef in Russia – Wagyu breed. Experimental studies were carried out on the basis of Bryansk Meat Company "APH "Miratorg" LLC in the Bryansk region during 2019–2023. It is shown that in 2020, the volume of production of "marbled" beef using a crossbreeding variant of Aberdeen-Angus × wagyu in the company (in live weight) It amounted to 1.2 thousand tons, which is 2.3 times more than the result of 2019. By 2031, the company plans to increase the production of delicatessen beef to 3.5 thousand tons, which will exceed the figure of 2021 by 15 times. The slaughter yield of young animals (bulls) is 62–65% and higher. Wagyu beef cattle are characterized by a genetic predisposition to the formation of intense "marbling" of meat and a high content of unsaturated fats in it. The Wagyu beef cattle breed is recommended as a new facility for the production of premium "marble" beef in Russia
