Abstract
The paper presents the results of a study of the quality indicators of raw milk sold in the markets of Bishkek. The studies were performed on a Lactoscan MCCW Combo analyzer purchased through the AgroDEV project. The milk analyzer is an effective, reliable method for monitoring milk quality and provides quick results. It has been established that the use of innovative methods reduces the time for analysis and allows you to quickly and accurately establish a large number of object parameters for assessment. The studies revealed the presence of adulterated milk in samples purchased from private individuals and at the Bishkek market. The amount of added water and other components was detected in the samples. The introduction of modern instrumental methods for assessing the quality of dairy raw materials into the educational process increases the degree of training of specialists in the field of technology for processing agricultural products
