NUTRITIONAL VALUE AND FOOD SAFETY OF WILD ANIMAL MEAT

Abstract

This article reflects the aspects of food safety of meat of wild commercial animals, as well as the features of veterinary and sanitary examination of products obtained from wild animals. In the modern world, commercial animals are becoming a delicacy, and despite this, the issues of veterinary and sanitary examination of this meat are particularly acute. In addition to the above, the article also reflects some parasitic diseases characteristic of wild animals, their pathogenesis, epizootological aspects, as well as issues of meat sales, if any diseases are detected
