PROCESSING OF MEAT PRODUCTS FROM HERD HORSE BREEDING IN YAKUTIA

Abstract

Meat of herd horses of Yakutia, especially foals and young stock, is characterized by high nutritive value than meat of other horse breeds and is highly valued among the inhabitants of the republic. The purpose of research is to determine the quality of horse meat and foals, the need to develop technologies oriented to consumer preferences of the local population. A comprehensive study of chemical composition, nutritional and biological value, organoleptic properties of horse meat and foals as raw materials for meat products has been carried out. The technologies of preparation of meat products, semi-finished products from meat and by-products, smoked and cooked products are scientifically substantiated. Scientific novelty of the research is confirmed by 5 patents of the Russian Federation. Main results of the research. In the period from 2019 to 2021, the laboratory of agricultural products processing and biochemical analyses of Yakutsk NIISKh developed 5 technical specifications (TS) with technological instructions (TI) and 1 standard of the organization (STO) for 6 types of products, in accordance with GOST R 51740–2016 “Specifications for food products” and TR TS 034/2013 On the safety of meat and meat products, which contribute to the improvement of taste, shelf life and transportability
